For a delicious Snooze breakfast, try one of the many egg creations or make your own loaded omelet. On my most recent visit, I got out of my comfort zone (I’m a pancake guy). I went with the Chilaquiles Benedict, sort of a wild Mexican take on the traditional dish. And guess what? It was terrific. Now, we were enjoying a Snooze breakfast in the first place because I had told Doreen about my favorite dish: the Pineapple upside down pancakes. This isn’t your typical flap jack and syrup, this is a decadent treat.
We’re talking “caramelized pineapple chunks, house made vanilla crème anglaise and cinnamon butter” to quote the Snooze breakfast menu. While this sounded pretty good to my breakfast companion on my most recent visit, she instead opted for a flight of three decadent pancakes. One with white chocolate chips, another – the upside down pineapple, and the third, the locals favorite sweet potato pancakes with pecans and ginger butter.
Snooze Breakfast is that most satisfying of all meals and delivering an exceptional culinary treat at a fair value is Snooze, a local Colorado chain with locations in Denver and Boulder. Snooze is located at 1617 Pearl Street. There is plenty of outdoor seating as well as a good sized indoor area. Be warned – just about any time of day, there is a wait for this Boulder breakfast favorite.

Snooze staffers talk about the culture of working there. They share a vibe, that being part of Snooze is special. Enjoy the harmony of great food and a staff that loves what they do. It’s evident in the little things, such as complimentary coffee while you wait. And you’ll enjoy the abundant and tasty cuisine while being treated like a guest. Music and conversation buzz. Give your cell number to the staff and they will text you when your table is ready.
Start with a single pancake to share at your table. The pancakes are light, flavorful and served in style, not merely with syrup and butter. Try the Pineapple Upside Down Pancakes Buttermilk pancakes with caramelized pineapple chunks, house made vanilla crème anglaise and cinnamon butter. Its to die for.
Variety in Menu
On various visits, we have worked our way through the menu. Juan’s Tacos are tasty, spice ’em up with a selection of hot sauces delivered to your table. Or try one of the Eggs Benedict breakfasts. We love the original with a tangy hollandaise sauce and Canadian bacon that is tender juicy and smoky in flavor. Not seeing what you want exactly? The staff will concoct an omelet to your specifications.
Coffee and Espresso
Snooze is located along coffee shop row on Pearl Street, so you know the kitchen is bringing it when it comes to coffee. Enjoy bottomless fresh brewed coffee. Snooze sends a daily order to their Guatemalan coffee roaster, they roast and grind the beans and then overnight the coffee to Colorado. It’s so fresh and amazing, you’ll come for the coffee and stay for the food.
